Taking the time to write out my inspirations, to encourage others through my words & to be transparent about real challenges I face. I will write about the days that don't seem note-worthy because I want to always see beauty in the ordinary. I find myself in a new adventure everyday and it is here that I attempt to put it into words. Enjoy!

Dreams Do Come True
I wrote the post below, must read for this picture to make sense! Can you believe in the same day my dad walks in the door while I'm playing Kinect (this body motion sensor game thing! So fun!) and while I'm jumping about and swinging my arms around my dad turns a large box toward me from the doorway... &&& BAM. This little baby looked my straight in the face. I guess I'm going to be able to get a jump start on my guitar practice! I HAD NO IDEA! And If You Put Your Mind To It
You know the famous saying, "If you put your mind to it... anythings possible" Or how about, "Practice makes perfect." We've all heard em, and all of us have said them one time or another. Well, I'm a fan of a good challenge so I'm going to apply the good ol' saying and put them to good use. I'm going to start playing guitar, taking lessons, and this next year will be dedicated to seeing the progress I make from putting my mind to it and practicing until perfection! I may be getting ahead of myself so, maybe not perfection but I really want to try as many things as I can to see my limits and to see myself exceed limits as well! Merry Christmas... And to all a goodnight?

BROWNIE BITES
VEGAN BROWNIE BITES
Ingredients
Vegetable oil spray
½ cup plus 2 tablespoons Bob's Red Mill gluten-free, all-purpose baking flour
½ cup sugar (I haven't tried it with Agave Nectar but you could always Experiment with it!)
1/4 cup unsweetened cocoa powder
1 ¼ teaspoons baking powder
1/8 teaspoon baking soda
½ teaspoon salt
¼ teaspoon xanthan gum
½ cup applesauce
¼ cup canola oil
1 tablespoon vanilla extract
½ cup dairy-free chocolate chips (I used Sunspire brand Organic Semi-Sweet chocolate chips, which are dairy free)
MethodPreheat oven to 325 degrees. Spray mini-muffin pan with vegetable oil spray. (KOD note: Use mini-muffin liners if you can find them; they give some shape to end result.)
In a medium bowl, combine baking flour, sugar, cocoa powder, baking powder, baking soda, salt and xanthan gum.
In another bowl, whisk applesauce, oil and vanilla, then stir into dry ingredients.
Stir in chocolate chips.
Spoon batter into muffin tin, filling them three-quarters full. Bake for 15 minutes, or until set.
Allow brownies to cool in pans for 15 minutes, then turn out onto a rack to cool completely.
